Tofu fried rice

When I moved to Kyoto in March, I had to cook for myself. Since then I'm experimenting with all the ingredients and flavours I can find in the store and try to cook dishes I had in restaurants, guest houses, friends houses, etc. Today I want to introduce my first recipe I came up with today. I was surprised how tasty it was, even though it only took like 10-15 minutes to cook.

What you need (for 1 Person, around 500kcal):

  • cooked rice 120g
  • soft Tofu 200g
  • Onion, half
  • Mushroom, 2
  • fried and seasoned meat, 100g
  • cut, frozen spinach, 40g
  • white sesame, 1-2 tbsp
  • Salad Oil
  • Soy sauce, 2 tbsp
  • Mirin, 1 tbsp
  • Sugar, 1 tbsp

Preparation

  • Cut the onions in slice
  • Cut the mushrooms in slice
  • Cook the rice, add a bit of rice wine vineguard to your liking
  • prepare the meat to your liking
  • mash the tofu to small little croutons-like shapes

Cooking

  • heat oil at low heat, put onions in it and fry them shortly
  • add mushrooms, fry a bit, add tofu
  • when all is heated together and fried a bit, add soy sauce, mirin and sugar. mix it well and let it cook for 1-2 minutes
  • add rice and mix well. now fry everything at medium heat
  • fry until the sauce has nearly vanished and add spinach and meat
  • heat until sauce has vanished and the ingredients are all warm
  • mix well, because the rice tends to glue to the fry pan
  • shortly before it's finished, add the sesame and other flavours you might enjoy
